Where ever you heard that most Kung Fu isn't actually fighting, was dead wrong. They are. Thousands of years ago in China, Kung Fu were both arts of war and what was used to fend off thieves and random attackers.
The term "Kung Fu" means "results gained from hard work", or some other wording similar, but in modern times is coined in meaning any Chinese martial art.
A martial art not being for actual fighting is keen to plastic fruit. Though they do exist, any legitimate Kung Fu school is going to being teaching actual fighting for actual self defense. There in lies the first mile stone: finding a good school.
Some arts, like Tai Chi, do stress healing and therapy, but have extremely well self defense applications as well. However, Tai Chi's popularity everywhere outside of China as the healing part, not the martial art, so finding a school that knows the full aspect of Tai Chi is a tough challenge. Also, there are general schools opened up by people who have no business even teaching.
Kung Fu or Gong Fu is a blanket term for over 1000 different variations of martial arts and fighting. Most of them are legitimately geared for fighting and/or self defense.
That being said, Wushu is usually what people think of when they hear about Kung Fu.
