Many become coaches. Some go to college and become doctors or something like that. Some become the real housewifes of somewhere. A few might join Dancing with the Stars. Some desperate ones will become village commentators for NBC.
The exact same things that other people who start a life at age 20 or so do.
Some go to college, some get married, some get jobs in any number of fields.
That would be sort of like asking "what do high school students do after graduation?"
A lot of them go on to compete in the NCAA and study for degrees so they can get regular, normal jobs. Most 20-21 year old gymnasts are in college trying to get degrees so they can join the workforce like the rest of us.
Many of them become coaches - Kim Zmeskal is now a coach.

From what I've learnt, ideal Olympic gymnasts are always in their mid to late teens. Most of them, even the youngest competitors in the Olympic tournament, don't get to participate in more than one Olympics. So, once they're 20 or 21, what do they do for a living?
