Yes it is a good martial art when taught correctly.
Yes it is a dance. The martial arts were hidden in dance as a way to train without the slave owners know they were training to fight. The slave owners loved to be entertained. So the dance and the drums were entertaining to them.
Being more flexible will come as you train.
Personally I think it would be difficult to spar against a person that is good in Capoeira. The reason I say that is because I'm comfortable fighting people that box, wrestle, judo, karate, tkd, muay thai, etc. But capoeira is different. They move differently. They use deceptions that are not common and I may expect one thing and they are trying to accomplish something completely different. I don't have enough experience to know what to expect. That is an advantage of know something like that. Keep in mind that sparring and self defense are not the same, nor are they equal. I'm confident in defending myself against anyone. What you doing sparring is different than sparring. Sparring is like a game. Self defense your life or well-being is threatened. Strategies are completely different.
