I'd do a few things first. You seem to believe that styles are mostly either grappling or striking. That is a very wrong belief. The way many commercial martial arts schools are run they do often not teach both to any extent. but if you are going to an Asian country and avoid the Tourist trap martial arts schools, you may find not only better instruction but that you are taught both grappling and striking. Remember that 99% of the people giving advice here have never studied in Asia. most have studied in very commercialized schools. Even those that have had non commercial training from traditional instructors may have been limited as to what parts of their style was available to them. I say these things not to put anyone down. These are just things I have learned over the last 46 years.

This is my inner judoka taking but for grappling in Asia that isn't like folk wrestling or for pure self defence an part of another art if go to Japan and find the kossen judo highschools apparently these guys are so good at ground work and grappling that they made dr Kano the inverter of judo change the rules so every match wouldn't go straight to the ground. Judo is every where in Asia check it out other than that I just don't know or don't care.
In Asia many countries have their own martial arts but all are derivatives of each others or you can say they have something common.Only thing is they have different names and some new or old styles and principles.
For example in Japan u will see judo but no Shuai Jiao. If you come to china its Shuai Jiao (Chinese wrestiling) than judo. Just try to find these local country names of Martial arts and it will be very easy for u to narrow down your search.
U will find many clubs in main cities like Shanghai, Beijing, Hong Kong, Tokyo.
If u go to thailand, they have BJJ+Muay Thai (sort of MMA type) in many gyms at Bangkok.
Go to mangolia and mangolian wrestling is best (some say it is original wrestling in asia and have long history than other grappling styles).Dont know much about Vietnam.
Hope that will help. Bottomline is know their traditional names in diff countries and then search it will help u a lot because in Asia many MAs have great impact of history so they dont like to change traditional names.
@KW- Few unknown? I'd say close to half if not the majority of them are grappling based.

I lived in Vietnam for part of my life. I know this really good Taekwondo school in the City. It's okay, it's Asia, you won't find that much McDojos.
Grappling is separated in sport, not in martial art.
All martial arts develop all ranges of engagement, not one to the exclusion of the other.
Soon as "stand-up", "ground game", "grappling style", are mentioned, they refer to sports not to martial arts. The two are worlds apart.
Martial arts are not about fighting. Fighting sports are.

I'll be teaching English in Asia next yeah. I'm a martial arts practitioner and I will die not being able to train anywhere. Now I know there are loads of places that specialize in various stand-up striking styles. I know places like Japan have grappling schools too. The thing is, I'm not sure exactly where in Asian I want to go. In the event I go somewhere in East Asian, or even China or Korea, I want to be able to find a place that emphasizes on grappling or better yet, mma. I with the exception of Japan and maybe Korea, MMA isn't really a huge deal. Nonetheless, I would like to find a place to grapple. Now I know grappling training in Asia is no were near as top notch as grappling training in the Brazil or the USA but I don't care. I just want a place where I can learn something. I'm not trying to be the worlds best fighter, I just want to have a good time and know more the the common Joe walking down the street. It's more of a hobby.
What are the odds of ALL Asian countries having grappling schools? Places like Thailand, Vietnam? I've been doing research but can't find any schools or clubs.
