Wrestling and football
Tennis... surprisingly...
I'm lousy at it myself, but I can watch that game in any set of circumstances.
Hot weather, cold weather... I can enjoy seeing an amateur get crushed by a pro, but I really enjoy seeing two tennis masters battling it out for 5 sets. I just don't think you can beat that game in terms of depth and action.
In terms of sports that I do myself, I like sailing. I love the challenge of making the best of the weather conditions, and making the turns perfectly, and getting the angle of the sails just right... but I can understand if others don't find that very exciting to watch.
