What kind of fighting would a simple takedown/tackle be under?? Would under the realm of stand-up fighting, ground fighting or clinch fighting??

It's in the clinch family, just like any other throw that puts a standing person on the ground and Kokoro, plenty of not for sport styles divide aspects of their martial art into categories for the same reason any legit school using a belt system uses it - to make teaching easier.

Kokoro is correct. Styles do not separate themselves into categories like that. This is done from a sports point of view.

Take-downs/throws all fall under grappling. Grappling also includes clinch, standing, and ground fighting and more. If a person is really knowledgeable of martial arts they would know this. Only the newbies and sports people ignorantly classify them separately.

Styles are not broken up int stand up ground or clinching only sports are not martial arts. Stand up and ground both contain clinching as well as striking.

A take down can can fall under all categories depending upon the type of take down it is, there is a long list of various take downs and not just one type.

Largely stand-up fighting.
