In my 30 years practicing Wing Chun, I've used it to knock out 4 people: 2 from strikes to the head, 1 from a throw, and 1 from a choke. All of them were bigger than me. You can definitely use Wing Chun to knock out bigger people, but I agree with Pat Arch: you need to find a good school. The name of the art isn't going to help you. You've got to find a teacher who can show you how to generate power and to apply it in ways that will stop an attacker. Lots of arts can do that, but lots of arts are represented by people who don't have the faintest idea of how to make it happen. A good school with a good teacher is the key.
First of all, let me say that all styles are effective; but they're not all effective based on the same criteria. For instance, bjj is effective for ground fighting, but not for stand against multiple opponents.
Now, Wing Chung was invented by a woman, for women. Originally, the style was meant to help women defend themselves against men who are, generally, bigger than women. On that regard, I would say Wing Chung is effective against a bigger opponent.
My final answer is this, though: choose the best school around you. Even if you want to take Wing Chung, it's better to have a good teacher. I'm not saying Wing Chung has no good teachers, far from it, I'm saying to choose the school who offers the best training in their martial art, be it Wing Chung, Brazilian Jiujutsu, or Boxing. **note that most school now require you to sign a contract, so don't automatically disregard it; but observe the length of the contract, the obvious costs (such as uniform, class fee, inscription fee) and read all the contract to avoid hidden fees (such as paying for "obligatory" seminars or weapons). If the contract is too lengthy and expensive, it's a red flag.
Interesting tidbit: I've heard many times that some of the cheapest schools are some of the best.

I do not know a lot about wing chun because i practice muay thai for two years and i have black belt in taekwondo.I think yes it is effective but muay thai is very effective too because of the kicks and punches.I hope i helped you.

Wing chun is about the worst martial art for taking on a big guy. It has a philosophy of going straight down the middle and being static. This the a horrible idea against a big guy as you will get bulldozed 9/10 times. If you watch some fights of smaller guys taking on big guys you will see that movement and angles is the way to go. Muay Thai utilizes angles a lot and would be great. Although I would supplement it with some grappling or just take MMA classes.
a knock out is a side effect of a concussion which takes less then 5 lbs of pressure. a slap in the face can cause a knock out. you can find hundreds of videos of a simple slap knocking someone out.
