Martial arts does not teach good hand to hand combat. Teachers do. Find the best teacher in your area. All martial arts can be taught many different ways and for many different reasons so focus on a teacher who teaches what you want to know rather than a style. A style does not guarantee what you will learn but a teacher does even though all martial arts styles were created at least at one time for hand to hand combat the teacher decides what and how is taught in his school.
If you want to learn Jackie Chan's style then you will have to look towards the Chinese martial arts.
1) The one with the best teacher. A style of martial art does not tell you if the teacher is good or bad, so you do not decide where to train based solely on which martial art.
2) Movies are not real. Fight scenes in movies are not real. No one is getting hit and every move is practiced several times before the final filming.
Generally most martial arts teach good hand-to-hand combat unless their main focus is point fighting or forms. There are a hundred different systems I could recommend, but here are just a few: BJJ, Sambo, Catch Wrestling, Muay Thai, boxing, Krav Maga, or Jeet Kune Do Concepts.
Theoretically, all of them. It's more up to the training methodology you use, as opposed to what label you put on a collection of techniques.
Just find a good teacher in your area.
